LSU Health New Orleans School of Medicine and the Chef John Folse Culinary Institute at Nicholls State University have teamed up to create a new elective in culinary medicine. The two-week course, taught at the Culinary Institute in Thibodaux, was immersive. Following morning lectures by a registered dietician and field trips to visit everything from a cardiac rehab unit to the grocery store to shop for healthy foods, the first group of eight medical students spent their afternoons in the kitchen perfecting their cooking skills under the tutelage of seasoned chefs. It was a unique and invaluable experience that will promote lifelong health for both the students and their patients.
